Hulk Cookies – Don’t Tell the Kids About the Spinach

We are really into super heroes right now in my house.  So when I decided to try and incorporate spinach into a cookie I figured that I should add the Incredible Hulk to make the cookies more fun for my kids.  That’s how “Hulk Cookies” came about.  I found a few recipes online and tailored to fit the needs of the Hulk Cookie.  I ended up making my version using gluten free flour, but you could use regular flour as well.

I wouldn’t recommend telling your kids that the cookies have spinach in them.  From my experience they may not even try them if they really know what’s in them.  Anyways, this time around the Hulk Cookies were a success.  Both kids ate them not knowing that they really had a vegetable in them.  Sure they had sugar as well, but at least they got some extra vitamins mixed in with their treat.

Hulk Cookies – Don’t Tell the Kids About the Spinach
Ingredients
  • 1 1/2 cups flour (regular or gluten free)
  • 2 TBS cornstarch
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 1/2 tsp salt
  • 1/4 cup milk
  • 1/4 cup fresh baby spinach
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • Additional sugar for rolling
Instructions
  1. In a blender, purée the milk and spinach until no specks of green remain. Set aside. In a medium bowl mix the dry ingredients. In a large bowl, cream the butter, sugar, vanilla extract and spinach milk. Combine the wet and dry into a sticky dough.
  2. Roll into small balls and roll in sugar. Flatten down cookie balls on the pan a little with a fork.
  3. Bake at 350 for 10-12 minutes.
