Healthy Premade Meals for Busy Families: The Grateful Chef

The Grateful Chef

I recently ordered food from The Grateful Chef, located near the Pioneer Columbus Community Center. They offer a weekly menu available for carryout on Wednesdays, freezer meals to-go, and a wide variety of scrumptious and nutritious grab-and-go options.

After months of staring at Instagram pics of the most amazing looking food, such as Thai Red Curry Chicken and Vegetables. I took the plunge.  I ordered a carryout meal. Carry out meals are available for pick up on Wednesdays. All weekdays the freezer and cooler out front are stocked with grab-and-go options.

I ordered ground turkey enchiladas. Corn tortillas layered  with ground turkey, roasted butternut squash, sweet corn, and a sweet mole sauce (if you are like me and not well versed in culinary terms, this is a sauce made with chocolate and chili peppers).

The following Wednesday, pickup day, I popped in to the store front on my way home from Imagination Playschool with my 3 year old.  While I waited for our food, I perused the Grab-N-Go cooler. It was full of amazing looking lunch options like Walnut Meat Taco Salad, Thai Rainbow Crunch Bowls, and Chia Pudding!!  I was extremely impressed with the wide variety of vegan and gluten-free offerings. Everything there was so delicious looking and nutritious!!

My daughter was “STARVING” in only that special way a toddler can.  Picture tears and sobbing…..Oh the drama!!!! In an attempt to preserve my sanity for our 20 minute drive home, I purchased a gluten-free zucchini brownie and 2 vegan chocolate chip cookie dough power balls for us to snack on.

All that was left of the power balls and the brownie when we arrived home were a few minute-sized crumbs in the paper bags.  I am still not convinced there actually was zucchini in our brownie. Surely something so oooey gooey and chocolately could not possibly contain a vegetable!!!!!

And then there was our lunch!!  My husband asked me how something with so healthy could be so yummy! I paid for the 2-serving portion of enchiladas.  However, the meal was so hearty that our family got 5 servings out of it.

Would I order from The Grateful Chef again?

My only regret is that I didn’t bring home a freezer meal and maybe a second brownie!!!

If you are looking for a new place to get healthy meals, head over 1938 SE 6th Street, Suite 103.  It doesn’t matter if you are looking to bring home dinner, dessert, lunch, or even just a snack; there is something for you.
