I cannot believe week six is complete. I feel like we are in the home-stretch!
Highlights for this week:
- I did not miss a day!
- I used the blue band a few times … boy, was that hard!
- My dad signed up for the next 10-week challenge! GO DAD! 🙂
- Nutrition was a struggle this week :/
I did my meal planning this week, which included sweet potato wedges as usual. I also made Whole 30 version of Sloppy Joe and it was really good! It also created enough for leftovers, so I had some as lunches. Check out the super easy recipe here. Perfect to make on meal prep days and eat all week long! Also, I had sweet potato wedges with mine instead of a potato.
I changed up my breakfast routine and have been making protein pancakes. I loved baked goods for breakfast, so this has kind of helped satisfy that craving. I have been using Flap Jacked Protein Pancake Mix which has 20g of protein per serving! I sometimes add cinnamon and chopped apples, chopped bananas, or just eat them plain. I then top them with almond butter, but have recently fell is love with this cashew butter from Once Again Nut Butter.
One of my new goals for the final five weeks was to eat MORE veggies! I stocked up on a bunch of frozen vegetables. I also found some different varieties so I wouldn’t get bored. I made sure not to grab any veggies that were loaded with cheese or anything else that increased the calories.
One thing I have had several people ask me is “how do you keep track of your protein, carbs, water, exercise, calories, etc.?” I use the MyFitness Pal app religiously! I had used it a few years ago and was kind of annoyed on how hard it was to transfer recipes. It has been updated and it is sooo easy to transfer a recipe! When I am meal planning and I come across a recipe, I will copy and paste the URL and you can figure out what the nutritional value of it is. There also have been some other great changes to make it more user friendly. Highly recommend this app!

Classes are so much fun and each one is challenging. I love it! I feel so much better the entire day and have great energy. I have already decided I will be signing up for the FIT program (maintenance) after the 10-weeks. I am excited to keep improving and continuing this journey 🙂
