Breakfast at Home for Mother’s Day – Easy Casserole Recipe

Going out for brunch and Mother’s Day seem to go hand and hand.  But many times going out for brunch will have you waiting in lines, feeling stressed out and leaving your wallet empty.  So this year try staying home and giving your mom or wife a great breakfast at home.  This easy breakfast casserole can be made by even the most cooking impaired chefs.  Pair it with some fruit and you have a winning combination that will make mom happy and start the day off right.

Easy Breakfast Casserole for Mom

  • 1 pkg croissant rolls
  • 1 lb mild sausage (You can substitute diced ham or if want to go meat free try diced peppers and onions)
  • 6 eggs, beaten
  • 2 cups shredded cheddar cheese
  1. Preheat oven to 350 degrees. Spray 9×13 baking dish with Cooking Spray. Brown sausage in skillet. Spread croissant dough in bottom of 9×13 dish. Add sausage, then pour eggs over sausage. Generously top with cheese. Bake at 350 degrees for 30 minutes.
